Ingredients

For The Gluten-Free Chocolate Cake

  • 2 cups gluten-free almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup melted organic coconut oil
  • 1/2 cup pure maple syrup (or honey)
  • 4 eggs
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For The Dairy-Free Frosting

  • 1 cup of unsweetened and organic coconut cream
  • 1/4 cup of pure maple syrup or honey
  • 1/4 cup of organic coconut oil
  • A pinch of salt (a little goes a long way)
  • 1 tsp of vanilla extract

Instructions

For The Gluten-Free Chocolate Cake:

  1. To make this gooey chocolate cake, preheat your oven to 350°F or 180°C and grease an 8-inch cake pan with melted organic coconut oil.
  2. Combine the dry ingredients like gluten-free almond flour, unsweetened cocoa powder, salt, and baking soda in a mixing bowl. 
  3. In a separate bowl, beat the eggs, and add the pure maple syrup, melted organic coconut oil, and vanilla extract. Mix the ingredients thoroughly. You can also use honey as a substitute for maple syrup. 
  4. Now, it’s time to bring together the dry and wet ingredients. Combine them and mix until a smooth chocolate batter forms.
  5. Carefully pour your chocolate batter into the cake pan and use a spatula to smooth out the top.
  6. Bake the chocolate cake for about 25 to 30 minutes. To check if it’s ready, insert a toothpick into the center of the cake. If it comes out clean, the cake is ready to be taken out in the oven!
  7. Let the chocolate cake cool in the pan for 10 minutes before transferring it to a wire rack.
  8. Once the chocolate cake is cooled, top it with your dairy-free coconut cream frosting, serve, and enjoy a bite!

For The Dairy-Free Frosting:

  1. Place a can of organic unsweetened coconut cream in your fridge for a few hours or overnight to separate the cream from the liquid.
  2. Scoop out the hardened coconut cream into a mixing bowl.
  3. Now, add pure maple syrup, vanilla extract, melted organic coconut oil, and a pinch of salt to the bowl. (Tip: You can also use honey as a substitute for maple syrup.)
  4. Beat the coconut cream mixture using an electric mixer until smooth and creamy.
  5. Place the coconut cream frosting in your fridge for a few minutes to firm it up if it’s too runny.
  6. Use the coconut cream frosting to top your chocolate cake. You can also add some toppings like fresh fruits or nuts for extra texture and flavor.
