  • 2 cups gluten-free almond flour

  • 4 large eggs
  • 2 cups grated carrots
  • 1/2 teaspoon organic ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup melted and cooled coconut oil 
  • 1/2 cup pure maple syrup (or honey)
  • 1/2 cup raisins 
  • 1/2 cup chopped walnuts 

 

For The Frosting:

  • 1 cup coconut cream (the solid part from a can of full-fat coconut milk)
  • 1 teaspoon vanilla extract
  • 1 tablespoon pure maple syrup (or honey)

Instructions

  1. To make this healthy carrot cake, preheat your oven to 350°F or 175°C. Grease a 9-inch cake pan with coconut oil and line it with parchment paper.
  2. Mix the gluten-free almond flour, organic coconut flour, ground cinnamon, organic ground ginger, ground nutmeg, baking powder, baking soda, and salt in a large bowl. 
  3. Whisk the eggs, pure maple syrup, melted coconut oil, and vanilla extract in a separate bowl.
  4. Combine the dry ingredients with the wet ingredients and stir. Fold in the raisins, grated carrots, and chopped walnuts.
  5. Pour the carrot cake batter into the cake pan and smooth out the top with a spatula.
  6. Bake the carrot cake for 30 to 35 minutes. Test it by inserting a toothpick into the center of the cake. If the toothpick comes out clean, then the carrot cake is ready.
  7. Let the carrot cake cool completely in the pan before removing and frosting.
