At the age of 18 months, Kathryn Watkins’s son was diagnosed with a dairy and nut allergy, which meant cooking became a little but more challenging. In order to keep her child healthy, she was forced to adapt her food choices to his needs. To add to that, her diagnosis with chronic lyme disease meant that changing her perspective on food was key — food was a means to strengthen and nourish her body. 

 

As Kathryn has always had a passion for cooking and food, the creation of her instagram account meant that she could now share her recipes with others. And for her dream paleo week, she has a delicious menu lined up of simple, quick recipes that the whole family is going to love. 

 

Breakfasts are super easy, generally kid-friendly and nutrient-dense with things like banana pancakes, pumpkin pancakes, squash breakfast casserole, and mocha protein smoothies. For lunches and dinners, Kathryn makes things like tuna cakes with watermelon radish salad, turkey and apple hash, pork biscuit baskets, chicken fajita bowls, and crispy bacon salmon.

 

And with a toddler running around, you can’t forget snack time. Her “desserts” are things like sunbutter and jelly thumbprint cookies, pumpkin bites, cherry “milkshakes” and peach or apple crisp.

 

The best thing is that all of Kathryn’s recipes are delicious, quick and loaded with nutrients to keep you going throughout the day and heal any health issues you may be dealing with. What we’ve listed here isn’t it either!
