Growing up a foodie, Sophia Cong has always had a passion for food. But she’s also a passionate traveler and loves to experience new cultures and cuisines, working them into her recipes in any way she can. As a busy nurse working long hours, she also knows the importance of eating healthy food to keep your body and mind sharp, so she uses healthy, seasonal ingredients in her recipes whenever possible.
For her dream paleo week, Sophia has a ton of recipes that everyone is going to love — and will most definitely leave you asking for more.
Breakfasts span all sorts of deliciousness with dishes like easy (and healthy!) french toast, blueberry muffins, shakshuka (poached eggs in tomato sauce), and maple pecan coconut granola. For lunches and dinners, Sophia loves things like basil pesto pasta salad, Korean beef bulgogi tacos, Easy One-Pot Chicken Fajita, vegan meatballs, and one-pot turkey chili.
Anyone have room for dessert? She has that covered, too, with pecan pie, brownies, pumpkin pie, and cookies and cream donuts.
Best of all, most things are gluten-free and dairy-free, so if you have any food intolerance, you don’t have to worry!
