About Georgia

Georgia is a Toronto-based gluten-free food lover, photographer, and recipe creator. Combining her passion for cooking with her photography skills, she showcases the beauty of gluten-free and celiac-friendly dishes.

Her love for food began early, watching her mom make traditional Greek meals. Later, after being diagnosed with celiac disease, Georgia was inspired to dive into gluten-free cooking and baking. She’s always experimenting to find delicious and nutritious recipes that everyone can enjoy.

As a photographer, Georgia captures each dish’s unique flavors, textures, and colors. She believes food should be an experience that brings people joy. When she’s not in the kitchen or behind the camera, you’ll find her exploring Toronto’s food scene, traveling, or enjoying time with family and friends. Georgia, a fan of healthy living, also believes that good food and fitness go hand in hand.

How Georgia Discovered Paleo Lifestyle?

Nine years ago, Georgia was diagnosed with celiac disease, a life-changing event that marked the beginning of a journey of discovery and adaptation. Initially, her focus was on strictly avoiding gluten, learning to identify hidden sources, and finding safe substitutes. Over time, she became more conscious of the quality of her food choices and how they impacted her overall health.

A few years into her gluten-free journey, Georgia stumbled upon the Paleo lifestyle while researching anti-inflammatory diets. Though she doesn’t follow Paleo strictly, she began incorporating some of its principles because of its focus on whole, nutrient-dense foods that fit well with celiac-friendly cooking.

For her, the simplicity of Paleo—lean proteins, fruits, vegetables, and healthy fats—brings a sense of balance and energy. The emphasis on fresh, unprocessed ingredients aligns perfectly with her gluten-free lifestyle, making it easier to enjoy flavorful, nourishing meals while avoiding gluten.

Benefits of Trying Paleo Lifestyle

As someone with Greek heritage and celiac disease, adopting a Paleo lifestyle transformed

Georgia’s health and well-being. Growing up surrounded by the Mediterranean diet’s focus on fresh vegetables, olive oil, and herbs, she found Paleo a natural fit. By removing grains and processed foods, Georgia experienced a significant reduction in inflammation, improved digestion, and consistent energy levels throughout the day.

Brain fog and fatigue symptoms diminished, giving her a renewed sense of mental clarity and focus. The Paleo emphasis on whole, nutrient-dense foods has helped her manage celiac symptoms effectively, allowing her to connect more deeply with food as medicine. This lifestyle feels sustainable, balancing nutrition with enjoyment, and honors her Greek roots by centering around natural, gluten-free ingredients that align with her heritage.

Challenges Georgia Encountered When Transitioning to the Paleo Diet

Transitioning to a semi-Paleo diet with celiac disease presented initial challenges for Georgia Spanidis. Especially in finding satisfying grain alternatives and managing social situations. Many of her go-to meals previously included gluten-free grains, requiring her to entirely shift her approach to food. To adapt, Georgia experimented with Paleo-friendly ingredients like cauliflower rice, sweet potatoes, and plantains, discovering delicious ways to enjoy meals without feeling restricted. Ensuring a balanced nutrient intake was another hurdle, which she addressed by incorporating various vegetables, healthy fats, and proteins.

For those new to the Paleo diet, Georgia recommends planning with meals and snacks you enjoy to help curb cravings for non-Paleo foods. She also advises checking ingredient lists on packaged items, as some “healthy” foods may still include added sugars or non-Paleo oils. Above all, maintaining flexibility and focusing on balance rather than perfection can make the Paleo lifestyle more enjoyable and sustainable in the long term.
