  • 2 avocados 
  • ½ red onion, very thinly sliced
  • 160 cherry tomatoes, halved
  • 1 red bell pepper, trimmed and chopped small
    juice of 1 lemon
  • freshly ground black pepper
  • 2 TB olive oil
  • sea salt flakes
  • 200g halloumi cheese, drained and sliced 
  • 4 TB fat of your choice for shallow-frying
  • fresh coriander or parsley leaves, picked and finely chopped


  1. Peel the avocados and remove the stones. 
  2. Cut the flesh into chunks and place in a bowl. Add the thinly sliced red onion, cherry tomatoes, and finely chopped red pepper. 
  3. Squeeze over fresh lemon juice and crack over a generous amount of black pepper. Drizzle with olive oil, season with sea salt flakes and mix well to combine. 
  4. To cook the halloumi, pat the pieces dry using kitchen paper. Heat the fat of your choice (You can use butter, but coconut oil or ghee will also work) in a large non-stick pan. 
  5. Fry the pieces over medium-high heat until golden on all sides. Carefully remove and place on a plate lined with kitchen paper to drain. 
  6. Season with sea salt flakes while still warm.
  7. Serve the avocado/tomato salad mix (and all the bowl juices) between 4 plates/bowls. Top with equal amounts of the fried halloumi and scatter over the chopped herbs.
