How Victoria Started The Paleo Diet?

Victoria discovered the Paleo living during her college years when dealing with a lot of health issues. A friend introduced her to Paleo, and being at CSU, where Dr. Loren Cordain was a professor, allowed her direct access to him and his book. Motivated by digestive issues and chronic illness, Victoria decided to embrace the Paleo diet. Being an all-or-nothing person, she jumped in and even persuaded her roommate to join her.

The Paleo diet played a crucial role for Victoria in identifying foods that aggravated her gut issues and helped kickstart her gut-healing journey. It introduced her to the wellness community and transformed her understanding of health and self-care. While recognizing that diet alone hasn’t completely healed her chronic illness, it has significantly contributed to managing her condition, facilitating gut healing, and gradually reintroducing more foods into her diet.

How Did Victoria Handle The Paleo Challenges?

Victoria has undergone various elimination diets and followed strict Autoimmune Protocol (AIP) to support her gut healing. However, in recent years, she has actively worked on reintroducing more foods, including gluten-free grains. Advocating against diet culture, Victoria believes in the importance of diverse diets prioritizing whole foods. While she continues to enjoy Paleo foods and predominantly sticks to whole foods, she has incorporated more non-Paleo options for the sake of diversity and mental well-being.

Victoria initially dealt with cravings, mainly because she wasn’t eating enough overall. Her advice for those transitioning to Paleo is to ensure they eat sufficient amounts, focusing on consuming plenty of protein. With the abundance of excellent Paleo recipes available today, following the diet has become much easier. Victoria encourages enjoying favorite foods in a healthier form, often with refined sugar replaced by Paleo-friendly alternatives.

Having experimented with various Paleo-related trends like strict diets and CrossFit, she discovered what works and what doesn’t for her.
