Whether it’s breakfast or dessert, baked breads are a great option. This chocolate zucchini bread by Addie is grain-free, gluten-free, dairy-free and paleo, and is loaded with healthy fats. It’s super easy takes less than 5 minutes to prepare and the taste is off the charts.

INGREDIENTS

Serves 8

 

    • 1 cup creamy almond butter
    • 1/4 cup cocoa powder 
    • 2 eggs, room temperature
    • 1 tsp. vanilla
    • 1/4 cup + 1 tbsp. coconut sugar
    • 1 tbsp. coconut oil, melted
    • Pinch sea salt
    • 1 cup raw zucchini, shredded and drained
    • 1/2 cup dark chocolate chips

 

HOW TO

 

  1. Preheat oven to 400 F / 200 C and line a bread pan with parchment paper.
  2. Add all ingredients together in a large mixing bowl.
  3. Pour batter into parchment lined bread pan and top with additional chocolate chips if desired.
  4. Bake for 25-30 minutes.
  5. Allow to cool completely before slicing.
