  • 500g chicken
  • Salt & pepper
  • Pinch of dried Italian herbs
  • 1 lemon
  • 2 tsp grain mustard (I used honey mustard)
  • Capers
  • 2 slivers of butter
  • ⅓ cup of water

  1. Slice half of the lemon into thin slices, and use the juice from the other half for the sauce. Cut the chicken breast into smaller pieces and pound to a thickness of about 1 cm.
  2. Season the chicken on both sides with salt, pepper, and herbs. Place a large frying pan over medium-high heat and spray with oil.
  3. Let it heat up, add the chicken, and cook for about 3 minutes on one side. When the chicken is browned, turn and cook the other side for approximately two more minutes.
  4. Then lower the heat, add the butter, water, grain mustard, lemon juice, lemon slices, and capers to the pan, and swirl it a few times to blend the flavors.
  5. Let the sauce simmer for about 4-5 minutes. Serve, for example, with green beans and roasted potatoes.

Prepping and Cooking Chicken Breasts

Chicken breasts are a go-to choice for many dishes, from salads to sandwiches, and are loved by health-conscious eaters and those who prefer white meat. Learn how to prep and cook chicken breasts perfectly for juicy, flavorful results.

Chicken breasts come from the front of the bird, specifically the chest area. Each bird has two breasts divided by a bone. This cut of meat is boneless and easy to shape into various dishes.

After slicing the chicken breast, you’ll have an oblong piece of meat thicker on one end and thinner on the other. To ensure even cooking, flatten the breast with a meat tenderizer. This method helps maintain moisture and promotes even cooking.

Cooking Techniques

  • Baking: Preheat your oven to 400°F. Lightly coat the breasts in olive oil and herbs, then bake for 20-25 minutes until the internal temperature reaches 165°F.
  • Frying: Coat the breasts in breadcrumbs or spices, then fry until golden brown and cooked through.
  • Grilling: Oil the grill grate and cook the breasts over medium heat for 5-7 minutes on each side until they reach 165°F internally.

Tips for Perfectly Cooked Chicken

  • Season the breasts with salt and pepper before cooking.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F.
  • Let the cooked chicken rest for 5 minutes before serving to allow juices to redistribute.

Chicken breasts have a mild flavor that pairs well with various seasonings and sauces. Chicken breasts are versatile and can be customized to suit any palate, whether baked, fried, or grilled.

Mastering the art of cooking chicken breasts opens up endless possibilities for delicious meals. Experiment with different flavors and cooking methods to discover your favorite way to enjoy this versatile protein.
