  • 2 corn cobs, cooked
  • 2 small zucchini 2 potatoes, boiled
  • 3 eggs
  • Salt and pepper
  • 2 tsp curry powder


  1. Grate the zucchini on a fine grater. Let the potato cool down, peel the skin off, and grate it on a fine grater. 
  2. Slice the corn off the cob and break it into smaller pieces.
  3. Beat the eggs with a fork or a whisk until frothy. Mix the veggies with eggs and spices.
  4. Place a frying pan over medium heat. Spray the pan with oil and let it heat up. Scoop small amounts of the fritter batter into the pan and fry for a few minutes on each side.
  5. Serve with a tablespoon of cottage cheese or another protein source and a little avocado.
